Everything is built on science and Nordic raw materials , hand-picked in the wild or from selected Scandinavian growers.

We work primarily organically, but are equally happy to support small, uncertified gardeners where taste and respect for nature drive the work.

Essensur can be used for all types of cooking. You can use it for marinating, boiling, steaming, dipping and just pouring over your favorite salad.

It has a clean sour-sweet taste and a complex aroma , which comes from the raw materials and is developed during a long fermentation. Developing good taste takes time and we give that time to all our products. Essensur is unpasteurized, free from additives, developed by an engineer in food and biotechnology.

Essensur enhances the flavor of the other ingredients and adds gut-healthy flora to every meal.

The ingredient list is very short: juice of fermented Nordic berries, fruits, or herbs.

Our products are made in small batches here in Denmark. We work closely with local gardeners who share our passion for quality and sustainability.

What is fermentation?

Fermentation is an ancient technique found in almost every culture around the world, shaped by local animals, plants, and seasons. In cooking and everyday life, fermentation refers to the process of transforming food using living microorganisms. These microorganisms can be lactic acid bacteria, yeast, acetic acid bacteria, or even complex mixtures like the SCOBY (symbiotic colony of bacteria and yeast) used to make kombucha.

This transformation creates new flavor molecules. Fermentation often produces acids and unpalatable free amino acids. In addition to these, fruity, vinegary, bready and yeasty flavors can also occur, as well as floral, nutty, creamy and pickled flavors. Fermented foods are essential to many cuisines and cultures, and include: Fish sauces and pastes, Wine, beer and cider, Sauerkraut, kimchi and pickles, Cheese and yogurt, Soy sauce, Bread and our Essensur.

Fermentation processes vary depending on the raw materials. The microbial composition of the finished product varies depending on the type and amount of ingredients used, as well as the environmental conditions during fermentation.

Is Essensur just a vinegar?

When we make Essensur, we combine special fermentation techniques to create a taste experience that is far richer and more balanced than what you may be familiar with.

This is why Essensur stands out:

  • A world of taste and color: We brew Essensur from various Nordic raw materials, each of which contributes unique flavor notes and beautiful colors. Through a very precise and gentle fermentation, we ensure that all the fine nuances are captured and preserved in every bottle.
  • Completely natural and alive: Essensur is 100% natural – completely without additives and unpasteurized. Because we do not heat-treat the product, all the good, naturally developed aromas and the rich consistency are allowed to remain in the bottle.

Why not just use regular vinegar?
The commercial vinegar you buy in the supermarket (e.g. wine or apple cider vinegar) is always pasteurized to extend its shelf life. This results in a product with a uniform acidity, consisting entirely of acetic acid . It is precisely the acetic acid that gives the well-known, sharp and slightly pungent smell and taste. Sometimes, flavorings, sugar, or fruit juice are also added to compensate for the lost aromas.

Essensur is different. It contains a natural balance of both lactic and acetic acid, as well as colors and aromas from the raw materials and the fermentation itself. It is this interplay that removes the sharp edge and instead gives Essensur a softer, deeper and much more exciting flavor profile.

What are the health benefits of fermentation?

Fermented foods have a number of benefits that can improve our health:

Improved nutritional value: The fermentation process can increase the content of vitamins and minerals in food. Enzymes break down food components and convert them into biologically active peptides. Fermented and unpasteurized foods such as Essensur contain live microorganisms and bioactive substances. According to many studies conducted in recent decades, fermented foods improve our intestinal flora and prevent various disorders associated with modern diets, which are often high in sugar, salt and fat.

How to use Essensur?

Our original products are made by extracting the full flavor and juiciness of fruits. We have designed Essensur to create the perfect balance in any dish. Do you have a salad with bitter cabbage or arugula that you usually don't like? The mild acidity from lactic and acetic acid combined with the delicate sweetness from berries and fruits creates a harmony that neutralizes the bitterness and lifts the flavor. Combine Essensur with mustard and oil to make a fantastic dressing for salads.

Mix 1 tbsp. Essence in a glass of water and make a refreshing drink. You can also play with juice, coffee, tea, and cocktails.

Use Essensur for pickling broccoli, carrots, cucumbers, tomatoes, eggplants, radishes, etc.

Boil some Essensur with some water and pour over your favorite vegetables, mushrooms, or seaweed.

Make all kinds of sauces with chili, spices, herbs, mirin, tahini, yeast flakes, etc.
