Avocado Sandwich with Poached Egg

A generous layer of mashed avocados is placed on top of a piece of crispy toast. The avocado, rich in healthy fats and nutrients, forms a creamy, plump base, whose natural sweetness and creaminess are perfectly balanced by a dash of acidity from Essensur. A poached egg on top, whose golden, liquid yolk when cut, transforms the dish into a heavenly combination of taste and texture. A little sprouts with a lot of vitamins complete the picture and turn the simple dish into an exquisite culinary experience.

Ingredients:

1 slice sourdough bread, toasted
½ avocado
Summer berries in Honey salt
1 large egg
Midnight Berry Essence or for poaching eggs
Watercress or other sprouts (e.g. watercress) for decoration

How to do it

Prepare the sandwich:

Place the toasted slice of sourdough bread on a plate. Spread the avocado on top and sprinkle with a pinch of salt.

Poach the egg:

Crack the egg into a small bowl. Bring a pot of water to a boil, then reduce the heat to a gentle simmer. Add 1 tablespoon of apple cider vinegar or Essensur and swirl the water around to create a gentle swirl. Carefully pour the egg into the center of the swirl. Gently swirl once more. Poach the egg for 3 to 4 minutes. Use a slotted spoon to remove the egg from the water.

Serve:

Place the poached egg on top of the avocado. Drizzle with a few drops of Midnight Berry Essensur and garnish with cress or other sprouts. Serve immediately.
