Essensur Guide

Essensur is a fermented product

Essensur is a liquid flavoring with a balanced profile of sweetness, umami, and acidity. It has a velvety mouthfeel and a taste reminiscent of a unique cross between rice vinegar, aged balsamic, citrus, and sparkling kombucha.

The product is created by long-term fermentation of berries, fruits, grains or herbs. This process transforms the raw materials into a tasty and nutritious sauce that has countless uses – from soups and dressings to drinks and pickling. Made exclusively from the highest quality ingredients, without the use of preservatives.

Contents: 150 mL, 250 mL, 1 L

Storage: Dry, dark and cool. Keep refrigerated after opening.

Essensur is used in savory and sweet cuisine

Essensur captures the essence of local, seasonal berries, fruits and vegetables and transforms them into a sweet-sour elixir that turns everyday food into a gourmet experience.

Whether for pickling, sauces, desserts or cocktails , Essensur finds its place in every kitchen.

The flavor profile is deep and complex and brings to mind a mature vintage wine or cold-risen sourdough bread.

We love Essensur for its complex acid profile and health benefits. The high content of organic acids is not only crucial for the good taste, but also for our immune system and digestion. The acid composition – a mixture of acetic, citric, quinic, gallic, malic and lactic acids – comes partly from the Nordic raw materials and partly from fermentation.

In cooking, acid acts as a conductor: It brightens, highlights, and harmonizes the flavors of a dish . When a chef feels that "something is missing," the answer is often acid.
At the same time, these acids act as antioxidants that can reduce inflammation, stabilize blood sugar, strengthen the immune system and digestion. They can even contribute to healthy cholesterol levels and improve cognitive functions such as concentration.

Essentials you want on your kitchen table

The choice of variant can inspire new directions in your cooking.

Essensur made from apples is created for those who love traditional cuisine and simple salads with lots of greens.

Recommended with: Oatmeal, dishes with peas, arugula, tomato, artichoke, bell pepper, rice, leek and green beans.

Essensur made from Mirabella plums is our Nordic take on the traditional Japanese Ume su. It is slightly sour and has a base of umami.

Recommended with: Sushi, noodles, soy-based dressings, eggplant, fresh coleslaw, celeriac, radishes and mushroom dishes. (And of course, anything with plums).

Blueberry and coffee essence is the perfect choice if you like deep, rich and spicy flavors. Think game meat, fish, seaweed and spicy food like Indian or Mexican.

Recommended with: Baked carrots, chanterelles, avocado, fish, lentil and legume dishes, dark chocolate, vanilla ice cream, ripe mango or cherry sauce.

Ramson essence is for those who love garlic. It pairs beautifully with Italian cuisine and various vegetables. Use it in all dishes where you would normally use garlic.

Recommended with: Chili, parsley, Brussels sprouts, broccoli, mushrooms, pasta dishes with tomato sauce, pizza, lasagna and kidney beans.
